The modern layered version of baklava as we know it today was perfected in the imperial kitchens of Topkapi Palace during the Ottoman Empire. Cooks spent centuries developing its paper-thin dough sheets. Interestingly, the palace bakers took their craft so seriously that an annual ceremony involved the Sultan presenting them with gold coins on trays of the sweet pastry.
