Cher Yam Tian and her husband Lim Choon Ngee started selling stir-fried crabs mixed with chili and tomato sauce from a pushcart along the Kallang River in 1956. This dish evolved into Singapore's world-famous chili crab. Surprisingly, the original recipe didn't use sambal or eggs, which were added later by rival chef Hooi Kok Wai to create the modern version we enjoy today.
