Quesillo, often called Oaxaca cheese outside the state, is made using a stretching process similar to Italian mozzarella. It is wound into a tight, delicious ball of cheese strings. Local legend says a young girl invented it in 1889 when she forgot about the milk curd and added hot water to hide her mistake! Photo: nsaum75¡שיחת!, Wikimedia Commons, CC BY-SA 3.0.
